Cemita Shack Could Open Friday

The Lafayette Road restaurant will have a drive-thru window, and customers can bring their own alcohol.

Michelle Lozuaway and her staff on Tuesday were busy serving lunch to a few friends and associates at the Cemita Shack, which is set to open in the next few days.

Lozuaway said they wanted to cook up just a few of the cemitas and get their kitchen going. If all goes according to plan, she said the new Lafayette Road eatery could open as soon as this Friday.

Lozuaway said their city health and building inspections last week went well.

When the Cemita Shack opens, it will be the result of several months of hard work for Lozuaway and Josh Lanahan, who both operate STREET on Islington Street.

Lanahan said the chicken, veggie burger, burgers and seafood cemitas they cooked on Tuesday represented "a dry run."

A cemita is a Mexican sandwich that includes avocado, chipotle mayo, cilantro and cheese.

Lanahan said people should check the Cemita Shack's Facebook page to see when they will have a soft opening where food will be sold at half-price. The restaurant includes a drive-thru window and will be BYOB.

Lozuaway said they do not regret opening in the fall because it will give them extra time to really get their new eatery well off the ground and running before the Southgate Plaza's new Cinemagic theaters and other businesses open.
